Almond Macaroons

Ingredients:

1 cup sugar
4 large egg whites
2 2/3 cups ground almonds
rind of 1 lemon
1 tsp lemon juice


Instructions:

Preheat oven to 350. LIine cookie sheet with parchment. Beat egg whites until foamy. Gradually add sugar and beat until stiff. Fold in ground almonds and lemon rind and juice. Drop by teaspoonful on parchment paper and leave space as they spread in the baking. Bake 12-15 min. Let cool slightly before removing from paper. Keep tightly covered.
