Apple Walnut Cake

Ingredients:

3 cups flour
1 3/4 cups sugar
1 tsp baking soda
1 tsp cinnamon
3/4 tsp salt
1/4 tsp nutmeg
1 cup oil
1/2 cup apple juice
1 tsp vanilla
2 large eggs
3 med apples
1 cup chopped walnuts
1 cup golden raisins


Instructions:

Preheat oven to 350. Grease and flour 10" Bundt pan. In mixer combine all ingredients except apples, walnuts and raisins. Mix on low until well blended, increase speed to med and beat for 2 min. Stir in apples, raisins and chopped walnuts. Pour batter to bundt pan an bake for 1 hr and 15 min or until inserted toothpick comes out clean. Cool in pan for 10 min and then invert on wire rack and remove pan. Can be frozen.
