Arroz con Frijoles

Ingredients:

2 19 oz kidney beans,
2 lbs onion
2 green peppers
15 oz can diced tomatoes
6 garlic cloves
1 tbs kosher salt
1/4 tsp hot pepper
3 tbs oil
1 1/2 cups cooked rice
2 cups tomato juice.
1 cup hot chicken bullion


Instructions:

Cook long grain rice according to directons. Drain & rinse kidney beans. Saute chopped onions, diced peppers and garlic til golden. Add diced tomatoes and saute for another 10 min. Add beans, cooked rice, spices, tomato juice and simmer uncovered until rice and beans are soft , about an hour. Liquid should be mostly absorbed. if not add more water or tomato juice. Adjust seasoning. Serve with meat or chicken. Can be made ahead as the ingredients absorb flavors. Can be frozen serves 12
