Artichoke Pasta Salad

Ingredients:

16 oz rollitini or shell pasta
1 tb oil
1 jar marinated artichokes
1/2 cup italian dressing
1 minced clove garlic
2 tbs cider vinegar
1 cup mayo
salt & pepper to taste
1/2 cup cooked broccoli
1/2 cup thawed peas
10 halved cherry tomatoes
1/2 cup halved pitted black olives


Instructions:

Cook Pasta with oil according to directions. Drain well Put drained pasta in large bowl. Add drained marinade from the artichokes, italian dressing and garlic. Cut artichoke hearts into 1/4's and add. Mix gently. In small bowl, combine vinegar,mayo and season to taste. Pour over pasta. Gently stir in broccoli, peas, tomatoes and olives. Refrigerate overnight to blend flavors. Mix gently before serving. Add more vegetables, if desired.
