Arroz con Pollo

Ingredients:

2 3 lbs chickens cut into 1/8's
3 pkg sazon con asfran
2 large diced onions
4 oz can tomato sauce
1 tbs soy sauce
1/8 tsp pepper
1/2 tsp garlic powder
4 large bay leaves
1/4 teaspoon nutmeg
2 cups instant brown rice
1 tsp salt
20 oz pkg frozen mixed vegetables
1 3/4 cup water



Instructions:

Clean and marinade chicken with 2 pkgs sazon. Saute diced onions in dutch oven. Brown chicken a few pieces at a time. Add tomato sauce, soy sauce, nutmeg, garlic powder. Simmer chicken and keep turning until soft. Spray baking pan and spread rice on bottom. Sprinkle with 1 pkg sazon 2 cups water and sauce from the chicken and 1 tsp salt. Layer chicken face down on rice and seal with foil. Bake @ 375 for 1 hour. Add defrosted vegetables under chicken and bake uncovered for another 1/2 hr. If sazon is no longer available kosher use your own spice mix
