Ingredients:

1 Large eggplant
1 clove garlic
2 tbs mayo
1 tsp lemon juice


Instructions:

Cut eggplant in half lengthwise. Place face down in oven or microwave and bake until done. Process garlic clove and scoop out the done eggplant. Add mayo and lemon juice and process until smooth. Taste and adjust seasoning. Serve as vegetable dip or with pita
