Barley and MushroomsCuisine: Parve Category: Side dish Servings: 8 Ingredients:1 cup chopped onions1/2 cup sliced mushrooms 2 tbs margarine or olive oil 1 1/3 cup pearl barley 5 cups chicken broth salt & pepper Instructions:Preheat oven to 350. Brown onions and mushrooms with the margarine or olive oil. In 2 qt casserole add onions to barley and cover with 5 cups of broth. Cover casserole and bake for 1 hr. Check. If barley is not soft and more lquid is needed add at this time and continue baking covered until barley is soft.,about 20-30, Adjust seasoning, maybe more salt &pepper. Variation: With the onions you can brown 1 cup ea. chopped celery, carrots, 2 minced garlic cloves.
