Apple Crumb Cake

Ingredients:

Crumb Topping:
3 cups flour
1 cup ea white, brown sugar
3 sticks soft margarine
pinch of salt
2 1/2 tsp vanilla
1 1/2 tsp cinnamon
Filling:
10 apples, peeled and sliced
1 cup sugar
1 tsp vanilla
1 tsp cinnamon
Batter:
1/2 lb melted margarine
1 cup sugar
1 tsp salt
1 cup milk or coffee rich
3 cups flour
6 tsp baking powder
1 1/2 tsp vanilla
2 beaten eggs


Instructions:

Preheat oven to 350. Crumb Topping: Mix first 6 ingredients together with 2 wooden spoons and knead til crumbly. Set aside. Filling: Mix together next 4 ingredients and let stand 10 min. Cake: Blend the next 8 ingredients togther. Line a 12x18 cookie sheet with foil and pour batter onto cookie sheet. Spread filling on top of batter. Sprinkly crumb topping on top of filling and bake for 30 min. Cool. Sprinkle confectionary sugar if desired.
