Bean Salad

Ingredients:

16 oz can chick peas drained
16 oz can green peas drained
16 oz can wax beans drained
16 oz can kidney beans, rinsed & drained
1/4 cup pickled red peppers drained
1/2 cup chopped scallions
1/2 cup diced green peppers
1/4 cup oil
2/3 cup vinegar or lemon juice
1/3 cup sugar
1 tsp kosher salt
1/8 tsp pepper


Instructions:

In large bowl combine all beans. Add diced peppers, green and red and chopped scallions. Mix together the rest of the ingredients and microwave for about 2 min or until sugar dissolves. Pour over beans and toss. Refrigerate overnight or longer. Taste and adjust seasoning. Can stay in refrigerator for week or longer.
