Ingredients:

3 cups cooked rice
3 cups milk or coffe rich
1 cup sugar
3/4 tsp salt
4 large eggs separated
2 tsp vanilla
21 oz can blueberry pie filling
1 tbs lemon juice
1 tbs butter or margarine



Instructions:

Combine 2 1/2 cups milk or coffe rich, 1/2 cup sugar, 1 tbs butter or margarine in saucepan. Simmer until thickened about 20 min. Stir frequently. Beat egg yolks with 1/2 cup coffe rich or milk. Stir slowly into rice and cook for another 2 min, stirring constantly. Add vanilla. Turn into greased casserole or 12x18 baking pan. Combine blueberry filling with lemon juice and spread over rice mixture. Bake @350 for 20 min or until heated thru. Remove from oven. Beat egg white until frothy, add remaining sugar, salt and vanilla. Beat until stiff. Spread meringue over hot baking pan and cover to the edges. Return to oven and bake 12-15 min or until tips of meringue turn slightly brown. Cool and refrigerate until chilled about 3 hrs.
