Blueberry Pie (Maya)

Ingredients:

4 pints blueberries
1 tbs grated lemon rind
1/2 cup + 1 tb sugar
3 tbs quick cooking tapioca
2 10" pie crusts
1 beaten egg


Instructions:

Prebake bottom crust for 10-15 min @ 375. Cool. Wash and clean fresh blueberries and toss with lemon rind, sugar & tapioca. Fill cooled bottom crust and pile high in center. Cover with second crust and slit. Bake on cookie sheet as it may drip. Bake @ 375 for 45 min. Remove from oven and brush beaten egg and return to brown for another 15 min.
