Chocolate Sponge

Ingredients:

3 oz grated bittersweet choc
1/2 cup ground almonds (optional)
9 large eggs separated
1 1/2 cups sugar
1/2 cup orange juice or water
1/2 cup potato starch
1/2 cup cake meal
1/2 tsp salt
1/2 tsp flavoring


Instructions:

Preheat oven to 350. Grate choc. Beat egg yolks until light and fluffly. Add sugar, orange juice and flavoring. Beat on high. Sift cake meal, potato starch. Sprinkle over yolk mixture and fold in lightly. Fold in grated choc. Whip egg whites with salt til stiff. Add egg whites to yolks gradually. Pour into ungreased 10" tube pan and bake for 1hr. reduce heat to 300 and bake another 15 min. Invert immediately and cool completely before removing from tube pan.
