Cabbage SoupCuisine: Pesach Category: Soups Servings: 12 Ingredients:8 cups water28 oz can whole tomatoes 8 oz tomato sauce 5 1/2 oz tomato paste 1 med onion 1/2 head cabbage shredded or 1 pkg. shredded cabbage or cole slaw 2 tbs oil 1/2 cup sugar brown or white 2 tbs lemon juice 1/2 cup cooked rice Meatballs: (optional) 1 lbs ground beef salt & pepper to taste 1 egg 2 tbs bread crumbs 1/4 tsp garlic powder Instructions:In large soup pot, brown shredded cabbage and sliced onions in oil. Combine tomato sauce,paste, whole or diced tomatoes and water. Add to browned cabbage. Mix ground beef with garlic, spices and breadcrumbs. Shape into tiny meatballs. Add to pot. Simmer for about 2 hrs. Add cooked rice and simmer for another 25 min. Taste and adjust seasoning. It should taste sweet & sour. Add more water if too thick.
