Lentil Soup California

Ingredients:

4 tbs olive oil
1 cup finely chopped celery
1 cup finely chopped carrots
1/3 cup chopped onions
2 cups lentils
4 cups water
2 1/4 cup stewed tomatoes
2 tsp salt
2 tsp sugar
1/4 tsp pepper
4 whole cloves
1 bay leaf


Instructions:

Process to chop all vegetables. Saute in soup pot till translucent. Wash and clean lentils. Add all other ingredients and simmer for 2 hrs. taste and adjust seasoning. Variation: add sliced hot dog or cubed salami if desired.
