Challah Kugel

Ingredients:

6 cups of dry challah pieces
6 large apples peeled and sliced
16 oz jar apricot jam
4 eggs
1 tbs vanilla
1 tsp cinnamon
1/2 cup brown sugar
juice of 1/2 lemon


Instructions:

Soak Challah in cold water til soft. Squeeze all the water out of it and place in mixing bowl. Add all other ingredients and combine. Grease 9x12 baking pan and sprinkle with corn flake crumbs. Pour in mixture and bake @ 350 for 1 1 1/2 hrs or until nicely browned on top. Serve warm or cold.
