Orange Chicken

Ingredients:

4 tbs orange juice
4 tbs orange marmalade
6 tsp dijon mustard
1 chicken cut into 1/8
2 slices of white bread
3/4 cup whole almonds
1/4 cup fresh parsley
1/4 tsp salt


Instructions:

Process bread, almonds, parsley & salt. Process coarsly, add some flavored bread crumbs if necessary. Pour into bowl & set aside. Process orange juice, marmalade, & mustard. Pour into bowl & dip each piece of chicken in mixture, Place single layer into baking pan. Pour extra marinade over chicken & set aside. Dip each piece of chicken into almond mixture, heavily coating all sides. Return to baking pan in a single layer. Refrigerate for 1 hour or overnight. Preheat oven to 425. Bake for 30-45 min uncovered or until chicken is done. If crumb coating starts to burn, cover pan with foil.
