Crescent Cookies

Ingredients:

1 cup margarine, 2 sticks
3 large eggs
1 1/2 cups potato starch or
try corn starch
1 cup sugar
2 2/3 cup ground filberts or almonds
1 tsp vanillin sugar or vanilla extract
1 lemon juice and rind
sliced almonds
Dip:
3/4 cup choc chips
1 tb water or orange juice
1 tbs margarine
1 tsp flavoring (vanilla, liqueur)



Instructions:

Cream margarine and sugar til smooth. Add one egg at a time. Grate lemon rind & add lemon juice. Slowly add potato starch, a little at a time til it thickens, almost a dough. Freeze dough for a few hours or overnight. Heat oven to 350. Take out of freezer and shape into 3" crescents by rolling in the palm of hand which is dusted with starch. Do not defrost. Or drop 1 teaspoon full into sliced almonds & roll. Place on parchment or greased cookie sheet & bake at 350 for 15-20 min. til the edges are lightly browned. They will spread. Cool. Melt choc with water, margarine and flavoring in microwave on low temp (275) for 1 1/2 min or til melted. check by beating with fork. Dip each end of crescent cookie in choc mix and place on wax paper to cool. If choc cools reheat in Microwave. Makes 40 cookies
