Fruit Topped Cake

Ingredients:

1/4 lb margarine (1/2 cup)
1 cup sugar
2 eggs
1 cup flour
1 tsp. baking powder
1 tsp. vanilla


Instructions:

Heat oven 350 & melt marg in a pot--remove from flame--add sugar (when a little cool)or melt margarine in Micro & then add beaten eggs, vanilla, flour mixed with baking powder. Stir all in the pot. Use a greased: 8x8 or 9x9. For 9x13 or 9x12, use 1 1/2 X the recipe. Top with any fruit--I use apples, berries, peaches, sometimes mixture of pears & apples. Sprinkle with cinnamon & sugar and bake at 350 degrees for about 1 hour--I always start checking about 40 minutes depending upon depth of mixture. Fruit & batter should be done in center. Variation: sometimes a drained can of pie filling(but I find this quite sweet unless you use drained sour cherry filling) Phyllis Mirchin Try 1/2 cup oil next time
