Eggplant Meat PieCuisine: Pesach Category: Beef Servings: 8 Ingredients:1 large eggplant1 tbs olive oil 1 lbs ground beef 2 med onions 1 clove garlic 1 tbs fresh parsley 1 tbs fresh marjoram 1/2 tsp nutmeg 2 tbs ketchup 1 large can sweet potatoes 1 1/2 oz bread crumbs 2 tbs margarine salt & pepper to taste Instructions:Peel, slice eggplant into 1/2" rounds. Fry in olive oil. Set aside. Mix together beef, onions garlic, parsley, majoram, nutmeg & salt & pepper. Grease 8" square pan. Layer beef mixture on bottom, cover with mashed sweet potatoes and then layer the eggplant which has been moistened with ketchup. Repeat layers and top with breadcrumbs& dot with margarine.
