Eggplant SandwichesCuisine: Pesach Category: Appetizer Servings: 4 Ingredients:1 med eggplant6 slices hard cheese 2 large eggs 1/2 tsp salt dash of white pepper 1 1/2 cups matzoh meal 2 tbs oil 2 cups tomato sauce 1/4 tsp garlic 20 oz tomato sauce 1/4 tsp sugar 1 clove garlic 2 tsp fresh parsley Instructions:Preheat oven to 375. Peel and slice eggplant into 8 round slices. Place 1 slice cheese on 1 round of eggplant & cover with 2nd round. Trim cheese to fit round. Beat eggs with salt & pepper. Dip "sandwich" into beaten eggs & then coat with matzoh meal. Place coated "sandwich" on greased cookie sheet and bake for 20-30 min. until nicely browned. Turn over for another 20 min. Combine tomato sauce with sugar garlic and fresh parsley and spoon over "sandwiches" & bake another few minutes. Variation: Eggplant can be coated and baked prior to filling.
