Ingredients:

28 oz canned or fresh tomatoes
1/2 large cucumber
3 tbs vinegar
2 tbs olive oil
1 clove garlic
2 cups tomato juice
1/2 large onion
1/2 cup diced green scallions
1/2 large diced green pepper
1 cup croutons (optional)


Instructions:

Process garlic while machine is running. If fresh tomatoes are used, heat in micro so that they can be peeled. Process all ingredients except green pepper and scallions. Add scallions and green pepper and chill. Add croutons as you serve the soup (optional).
