Health SaladCuisine: Pesach Category: Salads Plus Servings: 15 Ingredients:1 head small cabbage2 cucumbers 1 large bermuda onion 1 red pepper 1 green pepper 1 large carrot 1/4 cup kosher salt Dressing: 1/3 cup oil 1/3 cup vinegar 1/2 cup lemon juice 1 cup sugar Instructions:Shred cabbage and slice all other vegetables. Toss with kosher salt & cover with water. Let sit for at least 1 hr. Drain and reserve brine. Combine oil, vinegar, lemon juice and sugar. Micro to dissolve sugar or cook over small flame on top of stove stirring until sugar melts. Pour over drained cabbage and mix. Add brine to cover. Let stand overnight. Taste and adjust seasoning.
