Horseradish

Ingredients:

1 fresh horseradish
2/3 cup vinegar
4 tbs dry white wine(optional)
2 tsp sugar
1 tsp kosher salt
1 baked beet cut into 1" cubes



Instructions:

Scrub beet, wrap in foil and bake @ 420 for 1 hr. Let cool or prepare ahead & ref. Peel horseradish and cut into 1" cubes & process. Add all other ingredients until pureed. if possible taste and adjust salt, sugar & vinegar. If still coarse add a little water by the tablespoonfulstil desired consistency. Store in tight container.
