Lasagna MeatlessCuisine: Pesach Category: Entre Servings: 8 Ingredients:16 oz can whole tomatoes12 oz can tomato sauce 1/2 tsp oregano 1/2 tsp basil 1 tbs olive oil 2 large onions 1 clove garlic 6 oz chopped mushrooms 1 carrot, chopped 1/2 large pepper, chopped 8 oz lasagna noodles 3 oz parmesan cheese 5 oz sliced mozzarella 6 oz cottage cheese Instructions:Simmer tomatoes, tomato sauce, oregano, basil, salt & pepper. Saute chopped onions, garlic until onions are limp. Add mushrooms, carrots & green pepper and simmer until liquid is evaporated (almost 1 hr). Cook lasagna noodles al dente. Add tomato mixture to vegetables and simmer for another 15 min. Assemble as follows: Spoon a little of sauce on bottom of lasagna pan followed by a layer of noodles. Spread with cheeses and layer more noodles crisscross fashion. Add sauce and more noodles and top with remaining mozzarella.
