Minestrone Soup

Ingredients:

1 large spanish onion
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, sliced
4 med potatoes cut in cube
2 cups shredded cabbage (1/4 head)
2 med zuchini sliced
1 cup fresh green beans (1/2 lb)
28 oz canned tomatoes
8 cups water
4 cubes intstant beef bullion
1 tsp basil
1/2 tsp oregano
salt & pepper to taste
3 tbs olive oil
2 cups spaghetti or orzo


Instructions:

Chop onion & saute with garlic in 3 tbs oil. Add all other ingredients except pasta and simmer for 1 1/2 hrs until all vegetables are soft. Break spaghetti into 1" pieces and add. Cook for another 10-15 min until pasta is soft. For dairy serve with grated parmesan cheese. Substitution: 2 tbs tomato paste, 16 oz can stewed tomatoes for canned tomatoes.
