Mexican Chicken & Rice

Ingredients:

1 tbs olive oil
1 lbs chicken cutlets
1 small onion, chopped
1 small green pepper, chopped
10 oz frozen corn
1 cup chicken broth
1 cup mild salsa
1 1/2 cups minute rice



Instructions:

Cube chicken cutlets. Heat oil & add chicken, onion & pepper. Cook and stir until chicken is done. Add corn, broth & salsa. Bring to boil & add rice and cover. Remove from heat and let stand 5 min. Fluff & serve.
