Meat LasagnaCuisine: Pesach Category: Beef Servings: 6 Ingredients:3 onions, chopped2 tbs oil 1 lbs ground beef 1 large eggplant 16 oz tomato sauce 1 large green pepper 1/2 cup hot water 9 lasagna noodles 20 oz marinara sauce Instructions:Saute beef til brown, drain. Remove from skillet & add onions & oil & brown. Add peeled, cubed eggplant & saute til eggpant is very soft. Return beef to pan & add tomato sauce and simmer another 10 min. Cook lasagna noodles al dente. Spoon marinara sauce on bottom of lasagna pan, layer noodles on top, then add meat mixture. Repeat till the top, end with marinara sauce. Bake for 45 min.
