Mushroom Sauce

Ingredients:

1 cup sliced mushrooms (4 oz)
5 tbs margarine
3 tbs flour
1 1/2 cups parve chicken or beef broth
1/2 tsp salt only if needed
1/4 tsp pepper
dash nutmeg


Instructions:

Clean & slice mushrooms. In skillet, saute mushrooms in 2 tbs margarine til golden. Process 3 tbs margarine & flour til well blended. Pour 1 1/2 cups hot broth thru feeding tube while processor is running. Add seasoning & process til smooth. Transfer to saucepan, simmer over medium heat, stirring constantly until thick & bubbly. Stir in mushrooms. Taste & adjust salt & pepper. Makes 1 3/4 cup mushroom sauce. Can be frozen. Thaw & reheat & whisk in double boiler.
