Ingredients:

1 large eggplant
1 large onion
1 tbs oil
1 lb ground beef
1/2 cup chopped fresh parsley
8 oz tomato sauce
2 tbs tofu sour cream
1 tbs flour or potato starch
2 large beaten eggs


Instructions:

Peel, slice eggplant into 1/4" slices sprinkle kosher salt and let stand covered with heavy plate for 10 min. Rinse well and brush with oil & broil til light brown on both sides. Set aside. Saute onions til golden. Add ground beef & parsley. Simmer till meat is done. Drain excess fat. Add tomato sauce and simmer another few minutes. Grease square pan & layer eggpant, then meat mixture. Repeat & end with eggpant. Bake in 350 oven for 1/2 hr. Beat eggs and parve sour cream, flour & pepper. Pour on top & return to oven for another 20 min.
