Matzoh Stuffing

Ingredients:

1 large egg
1 1/2 tsp spice mix
2 plain matzohs
1 tsp olive oil
2 med chopped onions
1 tsp minced garlic
4 oz minced fresh mushrooms
3/4 cup grated potato
1 tbs fresh minced dill
1/2 cup finely chopped apple
1/2 tsp coarsly ground pepper


Instructions:

Beat eggs & spices to blend. Break mazohs into small pieces & stir into eggs to coat. Heat oil in skillet & saute 1/2 chopped onions, minced garlic & mushrooms. Stir until liquid is absorbed. Add coated matzoh & mix. Stir in remaining chopped onions. Squeezed out as much liquid as possible from grated potato & add to stuffing. Add dill, grated apple & pepper. Blend well. Let stand 5 min before using. Yields 2 cups of stuffing. Enought to stuff 4 lbs chicken or 5 lb breast of veal.
