Noodle Kugel

Ingredients:

1 lbs fine noodles
10 ice cubes
1/2 cup margarine, melted
2 cups non-dairy creamer
20 oz can crushed pineapple (optional)
1 cup sugar
7 large eggs
1 1/2 tsp vanilla
1 tsp baking powder
1/4 cup oil (grease pans)
1/3 cup corn flake crumbs or
1 bx vanilla wafers, crushed
1 can cherry filling
1 can blueberry filling
1 can pineapple filling


Instructions:

Preheat oven to 450.Grease 2 (9x12) pans with oil and sprinkle crumbs on bottom of pan. In large pot boil noodles for 4-6 min til al dente (check & immediately pour ice cubes into water. Drain noodles. Beat margarine, non-dairy creamer, sugar, eggs, vanilla & baking powder till well blended. Add drained noodles and mix well. Pour noodles into both pans & bake for 30 min. Remove from oven. Turn oven down to 350. On the diagonal alternate rows of crumbs with fruit filling. Divide the rows of filling with rows of crumbs. Return to oven & bake for another 30 min. Can be frozen. VARIATION: substitute 1 cup pineapple juice for 1 cup non dairy creamer. add the crushed pineapple to the noodle mix.
