Pepper Steak

Ingredients:

1 1/2 lbs steak (rib, shoulder)
2 tbs oil
2 garlic cloves minced
2 tbs thai peanut sauce
1 large onion cut into chunks
1 cup hot water
1 bullion cube (chicken, beef)
1/4 tsp ginger
2 med green pepper cut into strips
1 tbs corn starch
2 tsp molasses or sugar
2 tbs soy sauce
2 med tomatoes cut into wedges
8 oz mushrooms, sliced


Instructions:

In wok, heat oil & garlic. Cut beef into small strips add to wok & brown. Add peanut sauce. Dissolve bullion in hot water & to beef. Cover & simmer til meat is tender. Add cubed onions, sliced mushrooms, pepper strips & ginger. Continue to simmer til vegetables are slightly soft. Blend together soy sauce, molasses & starch. Add to beef & vegetables & continue to stir until well blended and liquid thickend. Add tomato wedges and just heat thru. Serve on rice. Top with crisp chinese noodles optional If beef is tough. A crock pot can be used. Let beef stew until soft about 2 hrs. Can be done ahead and frozen. Make rest of recipe when ready to serve
