Matzoh Spinach Pie

Ingredients:

20 oz frozen chopped spinach
3 large eggs
1 1/2 cups potatoes, boiled & mashed
3/4 cup grated cheddar
4 matzoh
2 tbs oil
salt & pepper to taste
warm water


Instructions:

Preheat oven to 350. Thaw frozen spinach & drain well. Add 1 egg to mashed potatoes. Add salt & pepper, 1/2 cup grated cheese & drained spinach, mix well. Soak 2 matzoh in warm water for 3 min & drain on paper towel. Grease 8x8 pan with 1 tbs oil. Heat pan in oven ti oil is hot. Line with 1 matzoh and spread spinach mixture on top cover with second matzoh. Beat 2 eggs well & add to the rest of the mashed potatoes, cheese & 1 tb oil. Blend well & spread over second matzoh. Bake for 1 hr til lightly browned.
