Pesach Egg Noodles

Ingredients:

4 large eggs
1 cup water
2 tbs potato starch


Instructions:

Beat eggs with water. Add potato starch. Heat skillet & grease very lightly. When skillet is hot, spoon in 1 tbs egg mixture. Tilt pan to let mixture cover completely. When done on the back. Remove & dry on paper towel. Let cool. It is like making blintzes. When they are all done, roll up tightly & slice finely to make the noodles. Use in chicken soup.
