Meat Borscht Soup

Ingredients:

1 small cabbage, shredded
1 large bermuda onion, sliced
1 tbs oil
1 tbs kosher salt
1/4 tsp pepper
4-5 garlic cloves
2 lbs flanken
2 beef bullions dissolved in hot water.
2 bunches of beets
1/3 cup vinegar
1/2 cup sugar


Instructions:

Cut flanken into chunks & sear in large pot. Remove & brown shredded cabbage, sliced onions, garlic, salt & pepper & oil. Return flanken to pot & add bullion & water to cover. Simmer for 1-1 1/2 hrs til meat is soft. Peel & slice or cube beets. Add vinegar & sugar to pot. Bring to boil & simmer till beets are soft, about 1/2 hr or more. Taste & adjust seasoning with more vinegar, sugar, salt & pepper. Variation: Bought borcht or canned beets can be added or substituted for fresh beets.
