Potato Puffs

Ingredients:

5 large potatoes, peeled
1 lb onions
2 large eggs
1/2 cup matzoh meal
1 tsp salt
1/4 tsp pepper
2 tbs oil


Instructions:

Slice & cook potatoes for mashing. Brown sliced onions in oil until solft & golden. Add to mashed potatoes. Add salt, pepper, eggs & matzoh meal. Let cool slightly. Make balls or use scooper to shape potatoes. Place on greased cookie sheet. Sprinkly with paprika & bake @ 375 for 1 hr until brown & crusty. Can be frozen.
