Latkes, PotatoCuisine: Pesach Category: Side dish Servings: 6 Ingredients:4 large potatoes, peeled1 med onion 2 large eggs 1 tsp baking powder 1 tsp salt 1/8 tsp pepper 1/3 cup flour or potato starch 1 tbs lemon juice Instructions:Peel process onion. Add eggs & process until smooth. Remove to bowl. Peel potatoes & grate in processor. Add to bowl & add lemon juice, mix. Replace grating blade with "S" blade & process all ingredients till coarsely chopped. Heat oil in frying pan & spoon in 1 tbs potato mix at a time. Do not turn till done on one side. Drain on paper towel. Reheat in oven. Can be frozen. Serve with applesauce or sour cream. To figure how many pottoes: 1 lb = 1 large potato 1 med onion= 4oz grated 1 egg Makes about 12 latkes. Tip: Mix just grated potatoes with lemon juice to keep it from turning color.
