Potato Pate

Ingredients:

1 onion, chopped
2 tbs oil
2 cups pototoes, cooked, mashed
2 eggs, beaten
2 tbs margarine
2 tbs potato water or parve cream
salt & pepper
2 cups sweet potato, cooked & mashed
2 eggs, beaten
2 tbs brown sugar
2 tbs margarine, melted
2 tbs apple juice
1 tsp lemon juice
1/2 tsp cinnamon
1/2 tsp ginger
dash salt





Instructions:

Cook & mash potatoes seperately. Preheat oven to 350. Grease loaf pan & line with wax paper. Saute chopped onion with oil til translucent & soft. Add to white mashed potatoes & puree. Add 2 eggs, 2 tbs margarine, parve cream, salt & pepper. In separate bowl, combine sweet potatoes with 2 eggs, 2 tbs brown sugar, 2 tbs apple juice, 2 tbs margarine, tsp lemon juice, 1/2 tsp cinnamon & salt. Spread 1/2 sweet potato mix on bottom of greased loaf pan followed by 1/2 white potato mix. Repeat. Cover with wax paper Place loaf pan in pan with hot water & bake for 1 hr. To serve remove top wax paper & invert loaf pan onto serving plate. Remove bottom wax paper. Serve warm or at room temperature.
