Ratners Onion Rolls

Ingredients:

1 pkg dry yeast or 1 tbs
10 oz water, lukewarm (115-120)
1/2 cup sugar
1 1/2 tsp salt
2 large eggs
1/2 cup oil less a tbs
4 1/2 cups flour
1 egg for wash
1 cup chopped onions
1 tsp salt
1 tbs poppyseeds
1 1/2 tsp caraway seeds
1 cup breadcrumbs
1/4 cup oil




Instructions:

Soften yeast in lukewarm water & 1 tbs sugar. Let it foam. Add sugar, salt, eggs, oil & enought flour to form a dough. Knead until smooth & elastic. Place in greased bowl, cover & let rise to double in bulk, about 1 hr. Mix 6 filling ingredients together, starting with chopped onions. Punch dough down. Knead & let sit for 10 min. Punch down & roll into 18x24 dough and cut into 11 pieces 6x3". Fill 1/3, fold over & fill again. Flatten down til they measure 5" & cut in half. Place rolls seamside down on lined cookie sheet. Brush with eggwash & sprinkle more onion mix on top of rolls. Let rise til double about 40 min. Bake in hot oven @ 375 for 15-20 min. Variation 1: Try whole wheat challah dough recipe and fill as above. Variation 2: Roll out into large rectangle. Spread with onion mix and roll up . Flatten slightly and cut into 3" pieces. Place on side (filling will show) cover with wet paper towels and let rise 1 hr or until double. Brush with egg yolk & 1 tsp water. Sprinkle some seeds & kosher salt on top and bake as above.
