Pumpernickel breadCuisine: Parve Category: Breads Servings: 10 Ingredients:3 cups bread flour3/8 cup rye flour 3/8 whole wheat flour 1.5 tbs dry milk solids 4 tbs parve cocoa 4 tbs corn meal 1.5 tsp salt 1.5 melted margarine 3 tbs molasses 1.5 tsp dry yeast 1 tsp sugar 12.5 oz ice water Instructions:Dissolve yeast in 1/4 cup warm water (115) with 1 tsp sugar. Let stand until it bubbles about 10 min. Place all dry ingredients in processor with plastic S blade. Add yeast and molasses & melted margarine. As it is processing Add ice water thru feed tube. Process until ball forms. Knead on floured board til smooth & elastic. Grease bowl. Place kneaded dough and cover with clear plastic and let rise til double in bulk. About 1 to 1.5 hrs. Place on floured board and punch down, cover and let rest for 10 min. Cut dough in half and place into 2 loaf pans or 1 large one. Wet paper towel and cover and let rise again until double in bulk (30 to 40 min) Bake at 350 for 1/2 hr or til knocked makes hollow sound. Cool and remove from pan.
