Rice & Black Beans

Ingredients:

1 tb olive oil
1 onion chopped
2 cloves garlic minced
15 oz can black or kidney beans
14 oz stewed tomatoes
1 cup water
1/2 tsp oregano
1 1/2 cups instant brown rice


Instructions:

Heat oil in skillet. Add onions & garlic & saute til golden. Drain & rinse beans & add with tomaotes,water & oregano. Bring to boil. Stir in rice. Bring to boil, cover & simmer for 5 min. Remove from heat and let stand 5 min. Fluff with fork. Can be reheated.
