Rice Kugel

Ingredients:

1 cup cooked rice
1 qt non dairy milk
4 tbs margarine
1/8 tsp salt
1/2 cup sugar to taste
1/4 cup raisins
1 tbs lemon juice
2 tsp vanilla
1 tsp cinnamon
3 large eggs, slightly beaten


Instructions:

Simmer rice, margarine, salt in parve milk until it thickens Cool slightly & add all other ingredients. Preheat oven to 375. Melt 2 tsp of margarine in square baking pan. Pour rive mixture into pan and bake for 1 hr or until golden on top. Cut into 16 squares and serve either hot or room temperature.
