Tuna Croquettes

Ingredients:

2 cans of tuna (7 oz ea)
2 large eggs
1/4 cup matzoh meal
1/2 tsp mustard
salt & pepper to taste
1 tb parsley optional
1 pkg. Croyden House Instant Potato Flakes
1 tsp chicken broth parve
1 tbs. onion powder
Variation:
4 potatoes
1 large onion chopped
1 tbs oil
TO TRIPLE RECIPE:
6 cans of tuna (7oz ea)
4 xlarge eggs
1/2 cup matzoh meal
1 1/2 tsp mustard
salt & pepper to taste
3 bags Croyden House Instant potato Flakes according to direcitons but 1/4 cup less water envelope
1 tbs parve chicken broth
1/4 cup onion powder
3 tbs parsley





Instructions:

Prepare 1 envelope of potato flakes according to pkg. directions but use 1/4 less water and add 1 tsp parve chicken broth powder. Flake tuna, add eggs, mustard, matzoh meal. Add to potatoe mixture. Chill for an hour or overnight. If mixture is too soft to form patties add a little more matzoh meal. Shape into patties. Dip into matzoh meal & fry until brown. Drain on paper towel. Serve with mushroom sauce or dill sauce. Makes 9 croquettes Variations: Peel & boil potatoes in salted water. Saute chopped onion in heated oil til lightly browned, add boiled potatoes and mash together. Add a little water if necessary.
