Spinach Vegetable Kugel

Ingredients:

1/2 green pepper, chopped
1 med chopped onion
2 celery, chopped (1/2 cup)
3 large chopped carrots
3 tbs margarine or olive oil
10 oz frozen spinach, thawed, drained
2 large eggs
1 1/2 tsp kosher salt
1/8 tsp pepper
1/2 cup matzoh meal


Instructions:

Preheat oven to 375. Grate all vegetables & saute them with margarine. Add defrosted, drained spinach & saute for another 10 minutes & add seasoning. Beat eggs slightly & add with matzoh meal. Taste and adjust seasoning to taste. Add more matzoh meal if needed. Turn into greased square pan & bake for 45 min to 1 hr or until browned on top. Can be frozen. If you double recipe, do not double the oil or the eggs or the matzoh meal. Use less than double. Variation: see Latkes, Spinach
