Passover Pancakes

Ingredients:

3/4 cup cake meal
3 tbs potato flour
2 tsp baking powder
2 tbs margarine/butter melted
3 tbs sugar
1/2 tsp salt
1 large egg
1 cup milk





Instructions:

Melt margarine, beat in egg. Sift dry ingredient & add to mixture. Add a little milk at a time while beating until it reaches consistency of a thick batter. If more liquid is needed, add a tbs of water at a time. Grease 7" frypan & heat. Use very little grease. Pour 2 to 3 tbs of batter into pan & tilt to spread batter over the whole pan. When edges are lightly brown, turn over gently & brown other side. Flip out onto towel. Repeat until batter is used up. Add a little margarine as need to pan.
