Taco Salad

Ingredients:

8 oz can chick peas
8 oz can white or yellow corn
1 small red onion
8 oz frozen peas or canned
1/2 diced cucumber
1/2 red or green pepper, diced
1 small diced tomato
red lettuce
taco chips

Dressing:
2 tbs mayo
3 tbs salsa
2 tbs ketchup


Instructions:

Drain all cans & mix together. Mix dressing together. Combine with drained legumes. Just before serving add lettuce torn into small pieces. Toss with vegetables. After it is well combined, add crumbled taco chips and toss lightly to mix. Serve immediately.
