Meat Sauce

Ingredients:

1 lb ground beef
1 large chopped onion
1 tbs oil
1 large eggplant
16 oz tomato sauce
20 oz tomato puree



Instructions:

In large saute pan, add oil & onions & and saute til golden then add peeled cubed eggplant. Saute until eggplant is soft & can be mashed. Takes about 1/2 hr or longer. Remove from pan and add ground beef and brown til it looses its red color, keep breaking up the ground beef, drain. Return eggplant mixture to the beef & simmer until well blended. Add tomato sauce & puree. If too thick add more tomato sauce. Add spices & simmer 10 min more. Serve on cooked pasta or layered for a lasagna or serve on bread.
