Pesach Yellow CakeCuisine: Parve Category: Cake & frost Servings: 12 Ingredients:8 large eggs, warmed1/3 cup matzoh cake meal 1/3 cup potato starch, sifted 3/4 cup sugar 1 tbs vanillin sugar 1/4 tsp salt 1 tbs lemon zest 1 tbs lemon juice 3 tbs melted margarine, or oil Instructions:Preheat oven to 350. Generously grease 10" spring form or 9x13 pan. Dust with potato starch & line with parchment. Place eggs in bowl & cover with hot water for 1 min to warm them. Do not omit this step. Break warmed eggs into heated dry mixing bowl and add sugar, vanillin sugar, salt lemon zest. Whip on low speed to combine ingredients. Increase speed to high and beat for 12 min. Batter will be extremely voluminous. In smaller bowl mix together dry ingredients & combine well. Fold dry mixture into egg mixture, folding very gently. Gently drizzle lemon juice and melted margarine or oil into batter. Pour batter into prepared pan & bake for 30 to 35 min til cake is set in center. Cool well before removing.
