Plum Tart (Shirley)

Ingredients:

1 cup sugar
1/2 cup margarine or oil
1 cup flour
1 tsp baking powder
pinch of salt
2 eggs
12 plums, halved

Topping:
sugar
lemon juice,
1+ tsp cinnamon


Instructions:

Preheat oven to 350. Cream sugar margarine till fluffy. Add eggs & beat well. Add flour, baking powder, salt & beat well. Spoon batter into greased 9" spring form pan. Layer 12 plusms cut in half (pit removed) skin side up. sprinkle lightly with sugar lemon juice & 1 or more teaspoons cinnamon. Bake at 350 for 1 hr. Remove & cool. Variation: Add 1 tsp vanilla, 1 tsp orange extract 1/2 tsp parve butter flavor.
