Veal Scalappine

Ingredients:

1 lb veal pounded thin
1/2 cup flour
1/2 tsp salt
1/8 tsp pepper
1/4 cup olive oil
1/2 clove garlic
1/4 lb thinly sliced mushrooms
1 med onion sliced thin
1 1/4 cup canned tomatoes
1/4 capers
1 tsp minced parsley
1/4 tsp oregano


Instructions:

Cut veal into serving portions. Mix flour with salt & pepper. Coat veal with flour. Heat oil in large skilled, add veal & brown (3 to 5 min) Remove from pan. Add mushrooms, onions & brown. Return veal to pan & add other ingredients Simmer covered for 1/2 hr or till veal is tender. Adjust salt & pepper To cut sharpness add a teaspoon of sugar if necessary. serve with spaghetti. Can be frozen.
